Mediterranean Wild Mushroom Sauce – great to spruce up any pasta dish or on steak or burgers

Include 2 Packets of 50g Mediterranean Mushroom Sauce

AIR DRIED TO 100g MAKES 400/500g HYDRATED SAUCE

100g (2x 50g packets) + 2 cups (500ml) liquid = serves 4; 50g + 1 cup (250ml) liquid = serves 1 or 2

 

TO RECONSTITUTE

  • Mix contents of 100g packet with 1 cup milk and 1 cup water or cream. Bring to the boil while stirring.
  • Turn down the heat, simmer until the sauce is hydrated - about 5 minutes (50g packet - half milk and half water/cream) For a healthier option, use only water or milk)

Mushroom & Olive Pasta

Ingredients
  • 250g Pasta
  • Stir! it up Mushroom Sauce
  • 1 TBS Olive Oil
  • 1 cup (250ml) milk
  • 1 cup (250ml) cream
  • 1 cup reserved pasta water
  • 1 cup Kalamata Olives - chopped
  • 1 cup shredded Parmesan Cheese
  • Salt & Pepper
Instructions
  1. Prepare 1 package of pasta according to package instructions. Drain the pasta and reserve 1 cup of pasta water.

  2. Hydrate the pasta sauce as per instructions.

  3. Add the drained pasta to the mushroom sauce plus the reserved cup of pasta water, Olive Oil, Kalamata Olives, and Parmesan.

  4. Stir to combine until the cheese has melted into the pasta.

Recipe Notes

Chef's tip: Bacon is a great addition to this recipe.  Any pasta can be used for this recipe.
