West African Maffė Peanut Sauce
– with coconut milk, curry, and garlic

Include 2 Packets of 50g West African Maffė Peanut Sauce

AIR-DRIED TO 100g MAKES 400/500g HYDRATED SAUCE

100g (2x 50g packets) + 2 cups (500ml) liquid = serves 4; 50g + 1 cup (250ml) liquid = serves 1 or 2

TO RECONSTITUTE:

  • Mix contents of 100g packet with 3 TBS Peanut Butter and 2 cups (500ml) Stock Or 3 TBS Peanut Butter and 1 Tin (400ml) Coconut Milk. Bring to the boil while stirring.
  • Turn down the heat, simmer until the sauce is hydrated - about 5 minutes (50g packet - half stock/ Peanut Butter or half peanut butter/coconut milk/)

Beef in Maffé Sauce

Ingredients
  • 500g Stewing Beef – Cubed
  • Stir! it up Maffe Sauce 100g
  • ¼ cup Peanuts (unsalted) chopped
  • 3 TBS Peanut butter
  • 1 TBS Olive Oil
  • 1 Tin (400ml) Coconut milk
  • Salt & Pepper
Instructions
  1. Heat the oil in a saucepan

  2. Season the beef and add to the hot saucepan turning the meat regularly until browned all over.

  3. Remove the meat from the pan and use the same pan to reconstitute sauce as per instructions.

  4. Add meat back into the pan. Stir, simmer gently until the meat is tender.

  5. Add chopped Peanuts and stir through.

Recipe Notes

Serve on Rice, Couscous or pasta with plain Yogurt and fresh coriander

CHEF’S TIP: Substitute equal quantities of chicken, fish, pork or tofu for thr stewing beef. Reduce cooking time when using fish or tofu
